At the start of the 16th century, Bayonne, a city in the southwest of France, was the first French port to import cocoa. Bayonne will become the first chocolate manufacturing city in the kingdom. Chocolate was introduced to the French court under Louis XIV. It will quickly be popular in all the courts of Europe until today, where it is consumed en masse.
If the cocoa is a tribute to Bayonne, the chilli is a tribute to the neighboring town of Espelette, known for its Espelette pepper. Chili was imported from Latin America, almost at the same time as cocoa. Unlike cocoa, Espelette pepper has remained a specialty of the region.
