If the cocoa is a tribute to Bayonne, the chilli is a tribute to the neighboring town of Espelette, known for its Espelette pepper. Chili was imported from Latin America, almost at the same time as cocoa. Unlike cocoa, Espelette pepper has remained a specialty of the region.
